Meet the Dietitian

Susan Hurd

Our Registered Dietitian, Susan Hurd, adds another dimension to our dining program by working with our campus community to encourage healthy lifestyles and to help individuals become more comfortable in their dining environment.  She has a passion for leading a healthy lifestyle and empowering people of all ages to reach their healthiest potential through food and nutrition.  Sue works closely with the
Institute for Student Success to ensure the health and safety of our students with medical needs. Food Allergies & Other Medical Needs

We take pride in sourcing wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator.  From general manager to front line servers, we work diligently to address students’ specific needs, especially those with food allergies, Celiac disease, or special diet needs.

Campus Dining Services is able to assist with most special dietary needs.  We encourage you to reach out if you have a food allergy/special diet concern. Please call the Dining Office at (610) 409-3602 or send us an email, Our Registered Dietitian, Susan Hurd is also available for assistance,  

However, if you require a meal plan modification due to a medical need, such as food allergies, Celiac disease, etc. please contact Dolly Singley, Director of Disabilities Services,, in the  Institute for Student Success, located on the lower level of Wismer Center.

Simple Servings

Simple Servings is our allergen-safe dining option for customers with food allergies, gluten intolerance, or those who prefer simple foods.  Simple Servings offers food free from common allergens:  peanuts, tree nuts, shellfish, wheat, soy, milk products, and eggs.  All foods offered are also free from gluten containing ingredients.  Simple Servings staff  members are carefully trained to avoid cross-contact with food allergens.  While our dining facility is not allergen free, Simple Servings utilizes separate equipment, storage areas, utensils, and preparation areas to minimize the chances of gluten and allergens in our Simple Servings foods.  

Simple Servings is open to anyone and is located in the Wismer Center Dining Hall, operating Mon-Sat from 11:30 am to 9:00 pm & on Sunday from 11:30 am - 7:00 pm.

My Zone

My Zone is our campus “pantry” where food items needed by students with celiac disease or food allergies can be housed with precautions against cross-contact. This special area is free of gluten-containing ingredients, as well as tree nuts and peanuts. My Zone gives students the ability to be involved in their own allergen-safe meal  preparation.


Mindful is Sodexo's health & wellness approach that helps you make healthy choices second nature! We are committed to creating healthy environments for our customers. Central to this effort is providing healthy, nutritious foods. The result of this initiative is an approach that focuses on transparency of ingredients, delicious food, satisfying portions and clarity in message so that you can make Mindful choices!

Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10 % of calories as saturated fat, and is restricted in sodium, and cholesterol. Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.



Menu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.


Vegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
